Here's a simple recipe for chicken biryani:
Ingredients:
1.5 lbs boneless chicken, cut into pieces
2 cups basmati rice
3 medium onions, sliced
4 cloves garlic, minced
1 inch ginger, grated
2 green chilies, sliced
2 large tomatoes, chopped
2 teaspoons coriander powder
1 teaspoon cumin powder
1 teaspoon turmeric powder
1 teaspoon chili powder
Salt, to taste
1/2 teaspoon garam masala
2 tablespoons ghee or oil
2 cups water
Fresh coriander leaves, chopped
Fresh mint leaves, chopped
2 cups boiled egg
1 lemon, sliced
Instructions:
- In a large pot, heat ghee or oil over medium heat.
- Add sliced onions and cook until they are golden brown.
- Add minced garlic and grated ginger, and cook for 2 minutes.
- Add sliced green chilies and chopped tomatoes, and cook until the tomatoes are soft.
- Add chicken pieces and cook until they are browned on all sides.
- Add coriander powder, cumin powder, turmeric powder, chili powder, and salt, and cook for 2 minutes.
- Add garam masala, 2 cups of water, and 2 cups of rice. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low, cover the pot, and cook until the rice is fully cooked and the liquid is absorbed (about 20 minutes).
- In a separate pan, heat ghee or oil and fry the eggs until crispy.
- To serve, layer the cooked rice and chicken mixture in a serving dish. Top with fried eggs, lemon slices, chopped coriander leaves, and mint leaves. Serve hot.
