  • 2-3 green cardamom pods

  • In a separate pan, heat 2 tbsp of ghee. Add the cumin seeds, asafoetida, cinnamon stick, green cardamom pods, cloves, and bay leaf. Fry for a few seconds until the spices release their aroma.

  • Pour this tempering over the mutton curry and mix well.

Here are a few more tips to make your slow-cooked mutton chusta even more delicious:

  • Marinate the mutton: Marinating the mutton in yogurt and spices for a few hours or overnight can make it more tender and flavorful.

  • Use bone-in mutton: Mutton with bones adds more flavor to the dish, so try to use bone-in pieces if possible.

  • Use a heavy-bottomed pot or pressure cooker: Slow cooking the mutton requires a heavy-bottomed pot or a pressure cooker to ensure even heat distribution and prevent burning.

  • Adjust the spice level: Adjust the spice level according to your preference. If you prefer a milder curry, reduce the amount of chili powder.

  • Use fresh spices: Using fresh spices can enhance the flavor of the dish. If you have whole spices, grind them yourself to get the freshest flavor.

  • Serve with raita: Serve the slow-cooked mutton chusta with raita, a yogurt-based side dish that can help balance out the heat and add a refreshing touch to the meal.

  • Rest the curry before serving: Resting the curry for 10-15 minutes after cooking can help the flavors to meld together and make the curry even more delicious.
